ΒΌ cup "EVOO" = Extra Virgin Olive Oil 2 Tablespoons chopped Garlic 1 lg white onion chopped 4 to 5 stalks of celery chopped Salt and Pepper to taste Hand full of chopped Basil(fresh) Hand full of chopped Oregano Boneless chicken breasts Preparation:

Cook garlic and onion and celery until they start to soften Salt and pepper to taste. Roll Chicken Breast in Egg and dip in Italian Bread crumbs Put in pan with medium heat (just burrow out a place in the onions and celery and fit the chicken in) Cook until chicken is brown on both sides Add one large can of Diced Tomatoes Add Basil and Oregano Cover and cook for an additional 35 min. Cook 2 cups of white rice separately Serve over rice
