Recipe's - Shortbread Bars &
Opera Fudge
Shortbread Bars Ingredients: 1 & 1/4 cups all-purpose flour;
1/4 cup sugar; 1/2 cup butter or margarine; 1 & 1/3 cups flaked coconut; 2/3 cup maple-blended syrup;
1/4 tsp salt.

Preparation: In bowl, stir together flour and sugar. Cut in butter till
mixture resembles fine crumbs. Press into 8x8x2" baking pan. Bake at 375°
for 15 to 20 minutes. Combine coconut, syrup, and salt in small saucepan. Cook,
stirring often, till coconut absorbs most of syrup, about 8 to 10 minutes.
Spread over warm crumb mixture and return to 375° oven for 10 minutes. While
warm, cut into small bars. Makes 24.
Opera Fudge
Ingredients: 2 cups sugar; 1/2 cup milk; 1/2 cup light cream;
1 tbs light corn syrup; 1/2 tsp salt; 1 tbs. butter or margarine; 1 tsp vanilla;
1/2 cup fresh cranberry's, chopped.
Preparation: Butter sides of heavy 2-quart saucepan. In it combine sugar,
milk, cream, corn syrup, and salt. Cook and stir over medium heat till mixture
boils. Cook to soft-ball stage (238°). Immediately remove from heat and cool to
lukewarm (110°) without stirring. Add butter and vanilla. Beat vigorously till
mixture becomes very thick and starts to lose its gloss, about 5 minutes.
Quickly stir in cranberries and spread in buttered 9x5x3" loaf pan. Score
while warm; cut when cool. Makes 30.
