Pizza - Crunchy Chicken
Marble Fudge
Ingredients: 4 cups of white sugar; 1-1/2 cups whipping cream; 1/2 cup of white corn syrup;
2 tablespoons of butter; 1 packet of Baker's chocolate; 1 teasspoon of vanilla; 1 teaspoon of almond flavor.

Directions: Bring first four ingredients to a boil until mixture has a soft ball texture when
dropped into cool water. Divide evenly into two bowls. Add baker's chocolate and vanilla
to one half. Add almond to the other half. Beat with a spoon by hand until both mixtures
are thick but still can be poured. (It works best to have two people, each beating one
mixture.)
Alternating mixtures, place large spoonfuls into a buttered 8" x 11" pan,
creating a marble effect. Refrigerate for two hours before cutting and serving.
Quick Mexican Pizza
Ingredients: 2 cups (8 oz.) shredded Colby/Monterey Jack cheese; 1/2 lb. of ground beef;
4 flour tortillas (10"); 1 cup of salsa; 1-1/2 tsp. chili powder; 1/2 tsp. of cumin;
green/red peppers, onions, mushrooms, etc. (as desired).
Directions: Cook meat, drain. Stir in seasonings. Spread 1/4 cup salsa and 1/2 cup meat mixtue on
each tortilla. Top each with 1/2 cup cheese and desired toppings. Bake in preheated 400
degree oven 8-10 minutes or until crisp and lightly browned. Makes 4 servings.
Crunchy Chicken
Ingredients: 4 skinned and boned chicken breast halves; 1/2 cup of Italian salad dressing;
2-1/2 cups of corn flakes, crushed.
Directions: Place chicken in a shallow dish or zip-top plastic bag; add salad dressing. Cover or
seal; refrigerate 1 hour. Remove chicken from marinade, discarding marinade.
Dredge chicken in cornflakes; place on a rack in a broiler pan. Bake at 375
degrees for 45 minutes or until tender. Yield: 4 servings.
Note: 4 one half inch pork chops may be substituted.
