1 cup light brown sugar ( packed);
1 cup dark corn syrup ( light can be used );
1 Tbsp. flour;
1 and 1/2 cup broken pecans ( halves );
2 tsp. vanilla; Pineapple Rice Pudding Kindly contributed by: Marylou Houser Ingredients: 1 1/4 cups cooked rice 2 eggs 1/2 tsp. salt 1/2 cup sugar 2 cups light cream or evaporated milk 1 cup crushed pineapple (drained) Directions: Beat eggs and add to cooked rice. Stir in salt and sugar. Add milk, then pineapple, stirring to blend and turn into a buttered quart baking dish and bake in a pan of hot water in a slow over for one hour. Serve with crushed pineapple or cream. Serves 6. |
