Cooking Recipes - Oyster Stuffing
Ingredients: 2 cups of shucked oysters and juice;
5 tablespoons butter, divided; 3 cups fresh breadcrumbs; 1/2 cup finely diced celery;
salt and freshly ground black pepper.
Preparation:
Heat oven to 375° F. Melt 2 tablespoons of butter in a
large heavy-bottomed skillet over medium heat. Add bread crumbs and fry until
they turn crisp and golden. Remove from pan and cool on a sheet pan.
In the same skillet, melt the remaining butter over
medium heat. Add celery and cook for about 3 minutes.
Combine celery and breadcrumbs in a mixing bowl. Season
generously with salt and pepper. Fold in oysters. If the dressing is too dry,
add juice of oysters.
Transfer mixture to a buttered baking dish. Bake for 30
minutes.
